What prompted the establishment of this shop?

The motivation originated from childhood friends wanting to do something together in the town where they grew up. Each pursues different professions, and the shared goal is to bring happiness to someone through at least one of these endeavors, which seems to be a compelling reason to continue running the shop in the future.

What characterizes the essence of the shop?

The establishment is a café, a tailor’s shop, and an antique store—all in one. While it may seem complex, if any aspect sparks interest, each element is designed to be enjoyed simply, as they are all part of everyday life.

What are your future goals for the business?

The plan involves relocation, albeit within Yokosuka city, preferably not too far from the current location. The aspiration is to have all three aspects delivered under one roof, where the three individuals can collectively share their respective contents.

What prompted the establishment of this shop?

I have a deep love for coffee, and the prospect of bringing happiness to someone or becoming a source of solace through my own coffee is truly fulfilling!

What characterizes the essence of the shop?

We are a small artisanal coffee shop located in Ito City on the Izu Peninsula. The owner, who relocated from Kanagawa Prefecture, initially started with a mobile bicycle coffee service before establishing the shop. We offer a wide range of coffee, from light to dark roasts.

What are your future goals for the business?

I aspire to work hard to have many people enjoy Konotori’s coffee!

What characterizes the essence of the shop?

Founded in 2011, we are a specialty coffee boutique located in Daikanyama, Shibuya-ku. Our concept is “No Sugar, But Sweet.” We strive to provide clean and sweet coffee that you’ll want to enjoy every day. From sourcing to roasting and extraction, we maintain consistent quality control throughout the entire process.

What are your future goals for the business?

Celebrating our 13th year since establishment, and looking forward, I would be delighted to continue expanding our specialty coffee business for another 10 or 20 years!

What prompted the establishment of this shop?

I started my shop with the desire to contribute to and revitalize the local community of Kamakura, a place that embraced me despite originally being an outsider. Through what I can do, I aim to give back to this warm and welcoming town. I want even those who are unfamiliar with ‘Zaimokuza’ to discover the charm of this city through coffee. I hope that people can say, ‘This town is great!’ as they enjoy their coffee. Ultimately, I would be delighted if my efforts become a catalyst for making more people fall in love with this town.

What characterizes the essence of the shop?

Local Vibes Coffee. A minimalistic shop with just one counter. Enjoy it as a casual meeting place for locals and tourists alike, with a daytime bar atmosphere.

What are your future goals for the business?

To spread a new coffee culture from Zaimokuza, we are actively working towards the construction of a roastery this year. Your continued support is greatly appreciated as we move forward with these initiatives. Thank you.

❻ Dark Arts Coffee

What prompted the establishment of this shop?

Dark Arts Coffee was opened in 2014 in Hackney, London, by friends who aimed to launch a completely new style of coffee brand that would overturn the conventions of traditional coffee shops. With a strong desire to enter the highly competitive Japanese market, they opened another branch in 2018 in Hayama, Kanagawa. The constant thrill of challenging new things in the rapidly changing coffee industry is both enjoyable and the reason they continue to pursue this venture.

What characterizes the essence of the shop?

It is a specialty store for single-origin light roasts. We offer a lineup of around 10 varieties at any given time, ranging from daily blends that never get boring to unique-tasting micro-lots created through experimental processes.

What are your future goals for the business?

Our goal is to establish a new coffee community space. We want to create a place where producers, importers, and coffee enthusiasts can interact. Through cupping events, seminars, and various workshops, we aim to contribute to the revitalization of the local community and the improvement of coffee knowledge and skills.

❼ Hojicha and Baked Goods

What prompted the establishment of this shop?

This shop opened in Hase, Kamakura in April 2019. It later relocated to Komachi Street in Kamakura in 2021, and operated there for four years until spring 2023. Currently, it operates only at the one store opened in Tokyo’s Shimo-Kitazawa in 2022. While the shop has moved around and opened in various locations, there is currently no particular attachment to a specific place. The goal is to share the space with customers, creating valuable time for both staff and customers.

What characterizes the essence of the shop?

The shop revolves around the theme of “baking.” We personally conduct roasting and baking for hojicha (roasted green tea), baked goods, and coffee. Through these baked items, we aim to create a warm atmosphere for customers. When you visit Shimo-Kitazawa, Tokyo, please do drop by.

What are your future goals for the business?

It is uncertain whether the shop’s capabilities align, but in the realms of hojicha and baked goods, there has been an increase in events with the older generation. I hope to play a role in connecting the older generation with those who are just starting to explore coffee or the younger generation and students, provided our shop has the competence for it.

What prompted the establishment of this shop?

I was born in a town where a Western scholar who coined the kanji for “coffee” for the first time in Japan lived. I run a café that serves coffee and spiced curry, and somehow I ended up making them myself and serving them to customers. I don’t know the reason.

What characterizes the essence of the shop?

It’s a quiet shop located in a valley.

What are your future goals for the business?

World peace. Realizing a society where people acknowledge each other. To achieve this, the goal is to connect communities and regions.

❾ Atsugi Coffee

What prompted the establishment of this shop?

We launched our shop in September 2022 with the goal of communicating with the local community through coffee. In December 2023, we opened a new roastery.

What characterizes the essence of the shop?

We offer coffee that you can’t experience anywhere else. We use coffee cultivated in our own plots in Guatemala and the pure water from the local Tanzawa mountain range. In addition, we collaborate with a local cake house for special sweets and work with a dye craftsman in Fujisawa to create hand-dyed gift bags. We actively engage with various local partners to create a variety of products.

What are your future goals for the business?

Our theme is “From Atsugi to the World, and from the World to Atsugi.” Our first goal is to establish a shop that is loved by the local community and actively engage in local product creation. Ultimately, we aim to extend our reach from Atsugi to the world and vice versa.

What prompted the establishment of this shop?

I want to deliver a high-quality cup of coffee to customers and convey the passion of the producers.

What characterizes the essence of the shop?

We are a specialty coffee shop that exclusively deals with lightly roasted beans. We aim to provide a fruity impression, emphasizing quality control in sourcing raw materials, roasting, extraction, and equipment selection.
While we are meticulous about quality, we also want to broaden the entry point to coffee. We consciously focus on casual customer service and creating a relaxed atmosphere.

What are your future goals for the business?

Our goals include purchasing directly from coffee-producing regions, opening a second store, and nurturing baristas and roasters in our local community of Yokosuka. We aspire to establish a coffee culture in Yokosuka.
We are preparing for the next Yokosuka Coffee Festival, planning to hold it in front of the City Hall Park in Yokosuka Central or at Mikasa Park. We are making progress in preparations for the upcoming event.

What prompted the establishment of this shop?

With the concept of “Anyone can be the manager for a day!” as our core, we provide a space (store) for hosting events and offer consultation for event planning, along with support for resident staff. Our aim is to create a third place that serves as a community and a place for making friends.

What characterizes the essence of the shop?

As a pioneer of event bars, Eden Main Store in Ikebukuro Yotsubashi celebrated its 7th year in 2022. Our first directly managed store opened in the Yanaka Ginza shopping street, coexisting with the nostalgic and charming Yanaka-Sen area.

What are your future goals for the business?

Our goals include raising awareness of the community culture of event bars and expanding franchise (FC) stores. As of 2023, there are two directly managed stores in the Kanto region and six FC stores nationwide (two more scheduled to open in spring 2024). We are actively recruiting franchise partners.
