Yokosuka’s fresh fish appeal
Chef Oshima: Yokosuka’s seafood is special because of its freshness. Being surrounded by Tokyo Bay and Sagami Bay, we have access to plenty of fresh ingredients. I personally visit the fishing port and get the freshest seafood from Mr Kuriyama of ‘Yasura Port Kaeimaru’.
I carefully select the best time of year for each ingredient, and if it’s fish, I age it for three to four days to enhance its flavor.
