Yoshida-no-Udon

This is the local soul food in Yoshida, which has now become popular nationwide.
The characteristic feature of the noodles is their firmness, which makes them extremely chewy.
The usual way of eating them is with cabbage and horsemeat as the main ingredient, a combination of soy sauce and miso paste as the broth, and a chili pepper-based mixture of spices fried in oil as the condiment.
There are more than 50 udon restaurants in the city, each with its own unique character, and there are also many fans who enjoy walking from restaurant to restaurant holding an udon map distributed by the town.
