MATSUBA-CHAYA, a soba shop serving artisan Jindaiji soba made with carefully selected ingredients

MATSUBA-CHAYA, a place to enjoy soba and Jindaiji’s atmosphere in each season

MATSUBA-CHAYA is a soba shop nestled in the natural surroundings of Jindaiji.
It is located right by the Jindai Botanical Garden.
The soba is made by skilled artisans who go the extra miles to pursue perfection. It is made from carefully-selected, domestic soba flour and other choice ingredients.

A big, old jolcham oak stands in the shop, adding a comforting presence to the atmosphere that has a sense of openness.
Forget the bustle of the city for a while and smack your lips to MATSUBA-CHAYA’s proudly-made soba at one of the outdoor tables, where you can enjoy the coloring leaves in fall and a bonfire in winter.

MATSUBA-CHAYA: Recommended soba menus

MATSUBA-CHAYA offers “hachi-wari soba” (80% buckwheat) and “ju-wari soba” (100% buckwheat).
MATSUBA-CHAYA changes how it mills its soba flour in accordance with different factors such as humidity, to serve soba that tastes best in each season.
The “ju-wari soba” is made from Hitachiaki soba flour produced in Gunma prefecture, while the “hachi-wari soba” uses Kitawase flour from Hokkaido or Hashikamiwase flour from Akita prefecture.
The soba noodles here are firm and smooth to the throat with the deep, natural flavor of buckwheat.
The tsuyu soup, made from carefully-selected ingredients, goes well with all types of soba.

〇 Tenzaru 1,530 yen

〇 Karami daikon soba 1,330 yen

The Tenzaru is a popular menu item featuring freshly-fried, crispy tempura.
Karami daikon soba uses Koshin-an Daikon (Asagi daikon; a native and traditional daikon variety of the Aizu region). It has both a unique hotness and umami that match perfectly with the tsuyu.
