SHINSUI-AN: Homemade Soba Made from Domestically Produced, Stone-Milled Soba Flour and Natural Water



SHINSUI-AN, a place to enjoy soba and the natural surroundings of Jindaiji


SHINSUI-AN was established in 1969, and it is located on Jindaiji-dori (street).
Plum blossoms and camellias bloom in the restaurant’s garden, and cherry trees grow along Jindaiji-dori. It is a beautiful place to visit in all seasons.
SHINSUI-AN’s soba noodles are homemade, and all items on the menu are made using natural water.
Enjoy the natural aroma of soba and the satisfying texture of the noodles as you chew and swallow them.

The restaurant has outside seats where you can bring your pets and gaze at the natural surroundings of Jindaiji.
There is also a spacious room with zashiki-style seating that can accommodate up to 45 persons.



SHINSUI-AN: Recommended soba menus

The soba-making artisans of SHINSUI-AN have experience making soba for the “soba offering ceremony” of the Jindaiji Soba Festival.
Their soba is made from domestically produced, stone-milled soba flour.
It has a distinctive firmness and a satisfying texture as it slides down the throat.
Enjoy it with the soup that is made with a tasty broth of bonito and kelp, a little less watery than usual.

Tenzaru soba is a popular menu item that couples cold soba with five types of tempura (prawns, carrot, eggplant, squash, and green shiso leaf), freshly fried by specialist tempura chefs.
As for hot soba, the nishin soba is recommended.
It has a large, sweet, boiled Pacific herring on top.

【A message from SHINSUI-AN】

At the time it was established, our shop’s name was read as “Fukamizu-an.” But customers started to call it “Shinsui-an,” and that name has stuck to today.
As a soba shop with the Chinese character for water (“sui” or “mizu”) in its name, we care a lot about water.

We use natural water for everything from kneading the noodles to boiling and rinsing them. Even the drinking water we serve to our customers is natural water.
We get our water from a well that is eighty meters deep. This natural underground water is free of the smell and taste of tap water, so you can enjoy the pure flavor of soba.
